Ingredients:
1 1/2 Lbs. Oxtails (beef tails)
1 C. Red Wine
1 1/2 Leeks sliced
1 C. (28oz.) Stewed Tomatoes
4 Garlic cloves chopped
3/4 C. Pearl Barley uncooked
1 Lg. Yellow onion chopped Fresh Pepper to taste
2 TBLS Malawi Gold
1/2 TBLS Rosemary
Procedure:
Combine all the above ingredients and cook off the wine and juice
from the stewed tomatoes, then continually add water until barley
is soft and cooked through. You may need to adjust the salt content.
This dish takes 3 to 4 hours of continues boil at a medium to high
heat. It is best if you use a Teflon Pan so you do not burn the
soup..
