Ingredients:
2 Lb. cleaned Mango Meat (found in bottles in the fridge section
near your produce isle)
1 medium Red Onion diced
4 Lb. cooked Chicken Breast or cooked Thigh Meat
9 oz. chopped Cashew Nuts
1/2 pint Baby Tomatoes
12 oz. Mayonnaise
3/4 C. Swazi Sauce
Procedure:
Preheat oven to 400 degrees, Bake off your chicken in the oven till
the chicken meat falls of the bone or until there is no pink color
in the middle of the chicken and let cool. Clean off the skin, extra
fat and any gristle and cut chicken into bite-sized pieces. Place
the chicken and the rest of the ingredients in the bowl as well.
You may want to cut down the size of mango slices but it is not
mandatory.
Hints:
This salad would be great stuffed into a pita, in a crowned Tomato,
on a bed of lettuce or simply between two of your favorite slices
of bread.
Garnish:
For a garnish, set aside a few nuts, onions and baby tomatoes to
throw on top.
