CHICKEN
ENCHILADAS

Ingredients:
1/2 oz. Cilantro chopped
1 Lbs. Cooked Chicken Meat
1/2 C. Red Onion sliced
1 C. Pineapple Chunks
1/3 C. Zulu Sauce
8 Tortillas
1 1/2 C. Shredded Cheddar Cheese Sauce
14 oz. Can of Coconut Milk
1 C. Zulu Sauce
Procedure:
Preheat oven to 375 degrees. Combine the chicken, cilantro, onions,
pineapple and 1/3 C. Zulu sauce. Roll into fresh tortillas and put
into baking dish. Cover enchiladas with mixture of coconut milk, 1
C. Zulu sauce and cover with cheese. Bake until light brown about
45 to 60 minutes.. |
