Ingredients:
11/2 Tsp. Peanut Oil
2 Cups chopped Tomatoes
1/2 Cup Swazi Sauce
1/2 Cup White wine
3 cloves minced garlic
1/3 Cup Tomato juice
1 Lb. Crab Meat
1 Cup Red Onions
Procedure:
Sauté peanut oil, red onions, chopped tomato, white wine and garlic
for 5 minutes and then add crab to pan and tomato juice. Cover with
lid and let simer 15 minutes then remove lid and let mixture reduce
down to thicken sauce for another 5-10 minutes. Ready to Serve on
rice or cous cous.
Garnish:
Julienne Green onions and Tomato Rose.
